Great recipe for blueberry muffins! nutritional info posted after the recipe....
2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1/4 cup butter
1 1/4 cups low-fat buttermilk
1 large egg
1 tablespoon grated lemon rind
1 cup blueberries
Cooking spray
1 tablespoon fresh lemon juice
1/2 cup powdered sugar
Preparation
Preheat oven to 400°.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (flour through nutmeg) in a medium bowl; cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal.
Combine buttermilk, egg, and rind; stir well with a whisk. Add to flour mixture; stir just until moist. Gently fold in blueberries.
Spoon batter into 12 muffin cups coated with cooking spray. Bake at 400° for 20 minutes or until the muffins spring back when lightly touched. Remove muffins from pans immediately, and place on a wire rack to cool.
Combine lemon juice and powdered sugar in a small bowl. Drizzle glaze evenly over cooled muffins.
Note: You can make these muffins up to 2 days ahead and glaze them the morning of the brunch.

Funny Story....
It may seem sort of long..but worth the read!!
A Friend sent this to me...... Very Funny ! Subject: : WOMAN'S WEEK AT THE GYM A WOMAN'S WEEK AT THE GYM If you read this without laughing out loud, there is something wrong with you. This is dedicated to everyone who ever attempted to get into a regular workout routine. Dear Diary, For my birthday this year, I purchased a week of personal training at the local health club. Although I am still in great shape since being a high school football cheerleader 43 years ago, I decided it would be a good idea to go ahead and give it a try. I called the club and made my reservations with a personal trainer named Christo, who identified himself as a 26-year-old aerobics instructor and model for athletic clothing and swim wear. Friends seemed pleased with my enthusiasm to get started! The club encouraged me to keep a diary to chart my progress. ________________________________ MONDAY: Started my day at 6:00 a.m. Tough to get out of bed, but found it was well worth it when I arrived at the health club to find Christo waiting for me. He is something of a Greek god-- with blond hair, dancing eyes, and a dazzling white smile. Woo Hoo!! Christo gave me a tour and showed me the machines... I enjoyed watching the skillful way in which he conducted his aerobics class after my workout today. Very inspiring! Christo was encouraging as I did my sit-ups, although my gut was already aching from holding it in the whole time he was around. This is going to be a FANTASTIC week!! ________________________________ TUESDAY: I drank a whole pot of coffee, but I finally made it out the door. Christo made me lie on my back and push a heavy iron bar into the air then he put weights on it! My legs were a little wobbly on the treadmill, but I made the full mile. His rewarding smile made it all worthwhile. I feel GREAT! It's a whole new life for me. _______________________________ WEDNESDAY: The only way I can brush my teeth is by laying the toothbrush on the counter and moving my mouth back and forth over it. I believe I have a hernia in both pectorals. Driving was OK as long as I didn't try to steer or stop. I parked on top of a GEO in the club parking lot. Christo was impatient with me, insisting that my screams bothered other club members.. His voice is a little too perky for that early in the morning and when he scolds, he gets this nasally whine that is VERY annoying. My chest hurt when I got on the treadmill, so Christo put me on the stair monster. Why would anyone invent a machine to simulate an activity rendered obsolete by elevators? Christo told me it would help me get in shape and enjoy life. He said some other crap too. _______________________________ THURSDAY: Butt hole was waiting for me with his vampire-like teeth exposed as his thin, cruel lips were pulled back in a full snarl. I couldn't help being a half an hour late-- it took me that long to tie my shoes. He took me to work out with dumbbells. When he was not looking, I ran and hid in the restroom. He sent some skinny witch to find me. Then, as punishment, he put me on the rowing machine-- which I sank. _________________________________ FRIDAY: I hate that jackass Christo more than any human being has ever hated any other human being in the history of the world. Stupid, skinny, anemic, anorexic, little aerobic instructor. If there was a part of my body I could move without unbearable pain, I would beat him with it. Christo wanted me to work on my triceps. I don't have any triceps! And if you don't want dents in the floor, don't hand me the darn barbells or anything that weighs more than a sandwich. 2 large, ripe bananas, sliced
2 cups frozen sliced strawberries, slightly defrosted in microwave, just to break up the block a bit

Great to see you all again after the craziness of last week - kids sick and on vacation did not add up to a good week for me at the gym!
I don't have access to recipes right now...but here's something I think is a real treat. Rather than joining my Brit husband for a fine lager in the evening (oh, those were the days!), I pour some diet tonic water over ice, squeeze in the lime, and pretend I've got a nice cocktail. It does the trick for me.

Three's Company +1 and others, here is my healthy recipe blog:
Honey Mustard Chicken (serves 4)
20 ounces canned pineapple slices in juice
1 pound skinless boneless chicken breast halves
2 teaspoons vegetable oil
1 teaspoon garlic powder
pepper to taste
1 teaspoon dried thyme
1 tablespoon cornstarch
1/4 cup honey
1/4 cup Dijon mustard
Drain pineapple, reserving juice. Press chicken breast halves to even thickness. Rub chicken with garlic powder and pepper. Brown chicken in hot oil in nonstick skillet. Combine 2 tablespoons of reserved pineapple juice with cornstarch; set aside. Combine honey and mustard. Stir into skillet with remaining pineapple juice. Spoon sauce over chicken. Cover and simmer 15 minutes. Stir in cornstarch mixture into pan juices. Add pineapple. Cook, stirring until sauce boils and thickens.
I serve with brown rice and red pepper slices.

Well, I'm not in CA anymore! Charlene is really getting into the fanny kicking mode this week! Although I can barely move my arms, I did try her BodyCombat class and let me tell you this, if you pick a fight with me, you are going to win! Hands down, you will win, though I do cheat and fight dirty.

Bad Week
Okay- So, I had my first bad weekend as far as eating! Now, I need to get back on track! Looking forward to a great week!

Good Monday, everyone. So, apparently, even though I've been working out steadily and eating pretty well (I did have one bad night, but still) I GAINED two pounds this week. What tha??
I must admit, I was dispirited at this discovery. SWIBBSBC helped, though, when she touched my shoulders and was all "Wow....rereeeeeaaeaarrrrr!!!" (That's a sexy cat-like sound, btw).
Anyway, I know that there will be peak and valleys, plateaus and climbs, but this was the first, and thus the hardest.
Time to suck it up and move on. I am recommitting. Doubling down. 19 days to go.

I want to thank you Kristin for the new shape my arms are starting to take. I need to keep this up so I can wear sleeveless shirts with confidence.

Tough weekend with the college friends. It is amazing that is this age I can still succumb to peer pressure to drink! I did spin yesterday though...yahoo....
Back-slide
So I tweaked my back about a week ago and despite a massage, icing, lots of advil, and no working out (well, only twice this past week)...it is still bothering me. Bummer. I don't want to undo the good progress that I think I made. And on top of that, a crazy week of work lead to cream puffs, eclairs, bacon cheese burger, filet mignon, beer, wine, and too many Girl Scout cookies to count all passing my lips (and probably right onto my hips). Oh dear. Here's to a better back and healtier food choices!

Thanks Dean for another great week of team training. I know I've worked hard when my muscles are sore the next day (or two) but it's also a bonus when I've worked on muscles that I had somehow forgotten about! :-)

Alas, I looked tempation in the eye, and walked away from that delicious bag of chocolate munchkins in the office this week. (Clearly planted there by Charlene or Hodder). Thank you Dean for your wisdom and quote, "Half of it is working out, the other half is what you stuff down your gullet". Eloquent as always. See you tomorrow for some more double dragon action!!! Time to step it up!
Cold got the best of me this past week. I had worked out for 6 days in a row when it finally got me. Think I pushed myself a little too hard, as I don't want to slow down the progress I'm seeing. Glad I listened to my coach though...Kristen was right, rest days are good and needed! Did spin on Friday and Body Pump yesterday...not 100% yet so I think today will be another rest day before I kick it up again this week. No better way to start the week than with a hardcore Mon 5:30am BP class with Lisa! Blasters...I hope to see you soon!

Hey guys! I'm back, though not fully functional as Charlene can attest to. Today she saved me 2x, once as I brought my iPod to the gym sans headphones and once as I couldn't get back into my locker! She was kind and said I was still on Pacific time, but we all know the truth, FLAKEY!!!! Anyway I turned in my week 4 sheet and I am making up a session tomorrow and look forward to seeing you all on Monday. I hope you are all doing well! Go 3s company +1!

Keeping at it
Working with the Rapid Blasters and Kristin, has me giving away pants that I just bought in October, and wearing pants that I haven't been able to wear in over a year. It just goes to prove that, 3 tangerines take up a lot less space than 3 grapefruits!
Common Question
A frequently asked question I have received is should I eat before I work out in the morning? If so, what?
My answer - do what works best for you. An empty stomach doesn't equal a bigger fat burn so it won't help your results. Some people exercise just fine in the morning with out eating first because they find it makes them sick if they eat before - it isn't ideal however it is fine as long as it doesn't hold your intensity back or make you lightheaded. The reason I say it is not ideal is because you want to wake up your metabolism as soon as you can in the morning. After fasting all night (while you sleep) your glycogen (or carb) stores are low. When you exercise your body will decide to hold on to fat if your glycogen levels are low because the body is paranoid and thinks a famine might occur.It holds on to the fat as emergency reserve and burns muscle for energy as an alternative. Not good. You want to be building lean muscle to help the body's metabolism increase.
The good news is that you don't need to have a 5 course breakfast - you just need a small amount to let the body know that fuel is on its way and you are not entering a famine. Just 100 to 200 calories will do. Quick suggestions? Banana (add a little bit of peanut butter if you want), yogurt, handful of nuts.

Hitting a slump - need to rev back up
Argh - a rough week at work, too many sweets on Valentine's Day and I lost my motivation and skipped step class yesterday afternoon...poop. But as Scarlet O'Hara would say - "tomorrow is a new day " (or something like that!)...and so I am psyched to try Charlene's bonus class and get my exercising mojo back. Rock and roll Fit Fab Four!
Half Time
Hello, everyone. So, we are halfway through our team training journey, and I thought I would give a status report to strike the fear of God in all of the other teams as an update. It's a crazy work week, so this will be short.
25 days. 21 workouts. 13 net lbs lost. 40 lbs muscle gained (approximately). Energy level from a 5 to an 8. Noticeable difference in clothing fit. No longer sleepy during afternoon work hours. Can now lift SWIBBSHC with a single pinky. Moved from 0 min. out of 60 jogging on treadmill to 17 min. out of 60 jogging on treadmill. Somewhat kept up with Dean during his visit to our team (not really, but he was nice about it). Won Super Bowl (this was in a dream, but still).
There you have it. I am incredibly impressed with the changes thus far, and I'm pumped to be in the swing of things now and passed the brutal DOMS. Y'all better bring it. Three's Company FTW!

Hi Bean Heads! those alligator push ups were a CHALLENGE! I think I burned off those espresso martinis, I won't be doing that again before a team work out. See you all tomorrow.

Week 4 of Team Training....and catching a group class whenever I can...and my pants are starting to fit differently. Yep, the booty is shrinking and lifting!! All of those moments when my mind is screaming "this burns like a BLEEP ( fill in any bomb here, as they usually slip out at some point during the workouts - thanks Kristen :) just slow down or lighten up a little" but I make a conscious effort to keep pushing, is starting to pay off :). I can't get the hook " you can go hard or you can go home" out of my head from this morn. So true.

Working on my BF
As I spend more time work out I find I have become more obsessed with specific body parts that bug me.
I am now on a back fat (BF) rampage! I cannot look at the mirror anymore without seeing it and now I see everyone in the stores that has it. Weird obsession huh?

Dear Team Training Participants,
We are now in the middle of week 4 and you are all still working very hard. Hopefully you are seeing some results!
I would like to address one issue that we are running into at this point. Your trainers work very hard to provide you with the best possible workout, based on those people within your team. They put a lot of time and effort into planning each session, based on each groups needs, as well as how many people they expect to train on each team. It is not an easy task for your trainer to adjust an entire session because you needed to switch groups due to a change in your schedule. (Keep in mind that your change affects the trainers plans for both the session you are missing with your team AND the session you are now attending with another team).
We had very good intentions when we allowed people the opportunity to switch if they needed to miss a session, but this past week of "switching and substituting" has gotten out of control. It has reached a point that the trainers have no idea who and how many will be at each session. I am asking that you all be respectful of how difficult it is when you switch, and that you only switch sessions when ABSOLUTELY NECESSARY. You committed yourself to a specific time and day for 8 weeks. You made this commitment to yourself, your team, and your trainer. When you switch groups for one session you affect everyone of those people in a negative way.
Please know that we DO understand that certain legitimate circumstances may come up that force you to miss. And in those circumstances we will work with you. If you run in to this situation you will need to work within only your trainer's schedule. Your trainer is the only one who knows your specific needs.
Thank you for your attention to this matter.
Your challenge for week 4: Must be completed from Wednesday, February 15th thru Sunday, February 19th.

Girl Scout Cookies..so good, but so bad!
Great workout today! Then came home and made some nice homemade, lowfat soup...salmon and broccolli for dinner...and then my husband tells me that he HAD to buy some boxes of Girl Scout cookies from someone he works with...REALLY??!!! I wish he just gave them the $6!!

If it wasn't for Team Training...
I would not have dragged myself to the gym this afternoon...but since I'm looking for any extra points I can get, it HAD to be done...and ya, know what? I felt better having done it. But alas, the 30 boxes of Girl Scout cookies that I have sitting around my house for an upcoming event are just SCREAMING "EAT ME" - and with the help of my boys, we did polish off a box this weekend. Oh well, tomorrow is a new day...and thanks to the LOSE IT! app on my iphone, I am going to try to more seriously follow what I consume to help me stay the course. FIT FAB FOUR - see you tomorrow! Looking forward to Kristen's new Bosu Ball moves!

Trying a new class...Pilates Strength on Tues. night. I'm a little worried because I have to see Charlene at 10:00 the next morning for Team Training. I hope I'm not too sore! But Ferocious 4's standing was a little weak this past week (last) so I will do it for the points!

Pumped!
Did the Body Pump class with Lisa this morning :)...always a great class and it's got me pumped to get back to the gym tomorrow to try a new class!! Extra points...Blasters, are you out there?? I'm hoping to bump in to "you" on our non-training days! Kristen...thanks for kicking my butt again this past week. Feeling stronger mentally and physically with each workout :).

Hello gang! I was in today and ran for 45 minutes, but my hips are a bit sore. I guess it's biking for me for a while! I forgot to tell you earlier that Charlene gave me my Fitness For You t-shirt already. I know you probably think it's because I saw her first on Thursday, but really it's because she likes me best. I'll try to squeak in a new class - we'll see how that goes! See you all on Monday!

Trying a new class
So, I'm already addicted to a lot of the group fitness classes....but, I'm going to give Zumba a try on Sunday. If there were no points involved, you would NEVER catch me in that class. Coordination is not one of my strengths.....right Charlene??? Hopefully there will be other people humiliating themselves right along with me. Who's in??

Feeling good
After this weeks training sessions I have found that my recovery time has decreased. I find myself looking forward to the next round of pain. I say this with caution... Kristin bring it on.

Whoa
I'm sore already. And it was only this morning we worked out! That was the toughest class yet, physically. (The toughest class mentally was the first - when I had to talk myself in to walking in the door.)

Finally! Rapid Blaster back on the board
Kristen...thanks for making me realize that I was using the WRONG email account! Duh, lol! Truth is, this whole ramped up workout schedule I'm trying to maintain has got me a bit delirious BUT feels SO good! Loving the classes and the team training - week 3 and I'm starting to see the results! More motivation :)...starting to crave the pain!

Week 2
I have been out of town since last Wed! ,I was able to get 4 workouts in while in Indiana, but need to get my diet back on track! Looking forward to getting back to a routine and Team Training
Team Training Saves Battered Patriots Fan
So that game stunk, huh? It comes down to the two best players on the team, Welker wide open, and the Superbowl slipping through his hands. We couldn't fall on one of those fumbles? Brady couldn't add ten yards to that pass to Gronk? A safety? On the first play? I'm not going to lie; I went to bed angry, woke up semi-depressed, and moped into work despondent and in utter-despair at the prospect of having to think and argue. I would have made mean faces at a kitten if I had seen one.

I know, right?
And then came my Monday team workout, and along with it the feeling I've missed for about two years.
Working out was fun today! Yes, it was hard. Yes, there was pain, and buckets of sweat, and even those s*&&*' f*&(&'*&)*$(@(#(@ walking lunges. Bit we did it, and my legs didn't fall off. I even wanted more! As the heart rate went up, the badness melted away. I needed it, and it's awesome to have this feeling again.
Thanks much to my team for the motivation. Also a special shout out to SWIBBSBC for some awesome (and not unhealthy) Superbowl snackage. Two weeks in, and I'm hitting the groove. Let's keep going and get some results.

Alright. The Super Bowl is over. I ate my body weight in salty stuff that wasn't fabulous for my diet.
But I'm back. Forget the score, forget the cheat day. It's on now. The Cougars are going to leap back up to the top of the food chain.
Side note: there's nothing like a new puppy for your metabolism. When you pop up 15 times per day to prevent and/or clean up accidents, it should count as a workout.

Feeling SUPAH this Sunday!
Thanks FFY! I love the Super Bowl Sunday 40-minute classes - great variety and super fun! I got through three classes today and actually was not crawling home...this working-out more frequently thing is paying off! (ha, ha, ha - no shocker there)....but with the Team Training I actually get off my butt and do it - despite being tired or too much to do at work or whatever...thanks to Kristen and the Fit Fab Four - bring on Week Three!

I hope that you are starting to see some results from your hard work. Only YOU know if you are doing all that you can to reach your goals. If you aren't, you need to find the discipline within yourself to either take more time for cardio workouts at the gym or maybe adjust your diet slightly. There are likely a few of you who's bodies are taking a little longer to "kick start." Remain confident that, if you continue to work hard and follow the guidance and instruction of your personal trainer, the results will come. One thing remains certain...if you get discouraged and give up you will never see any results. You have all taken this step toward Team Training because you wanted "change." You have recognized that change only occurs when you do something differently. You need to continue different ways from your past so that you get different results.
I came up with a quote for you all while I was running on the treadmill the other day as I continue to try to "kick start" my body..."Every step you take is one step closer to a better and healthier life." You are doing EXACTLY what you need to be doing to get to where you want to be! KEEP IT UP!!!!!

This weeks challenge from me:
Every Team Training Participant who checks in 5 different days this week and works out here at Fitness For You for a 1 hour minimum each day will receive 5 extra points. The only way for us to track that you have completed this is for you to swipe in with your key tag as you always do, and then to also swipe out or check out at the front desk. Be sure that you have been logged both in and out to qualify for your extra points!
Good luck this week - and stay disciplined for the Superbowl!!!! Limit your alcohol intake. Snack on Baked Tortilla Chips and Salsa instead of all the heavy, creamy, oily, buttery options! Veggies are great too - with a very small amout of dip if you have to.

Oh, I Get a Good Feeling
I can already feel my core tighter than before we started. Love that feeling-- and love when my body/ metabolism craves more protein. My personal goal the next few weeks is to kick it up a notch outside team training-- intense cardio and weights. I'm wanting that feeling of complete exhaustion - knowing I pushed myself.
Spin Shoes? Anyone LOVE theirs?
I think it is finally time for me to invest in spin shoes but curious if anyone has opinions on brands/styles.
I am between two styles of Pearl Izumi's (the X-Alp an X-Road). Both are laced and I am hearing that laces are better for fit, but seems like I mostly see velcro styles.
Curious if anyone has tried both styles (laced/velcro) and has preference or opinions?

Weigh In
Weight Watchers tonight. Did not go as well as I wanted. I have to try harder, three more pounds and life time member! Nothing else to blame.
No pain....no gain
Well if this saying is true, this week I saw a significant gain. It feels great to be back in the gym after a long hiatus.

Well they say the best way to change your body when working out is to shock it. So after a 7:15 am ab class with Kristen my body should be shocked for at least a month!
